We asked four chefs to share kitchen products that they find useful both in their restaurants and when they’re off-duty. Here are their top picks.
Japanese chef’s utility knives
A high-quality knife is essential for any chef.
“A good knife is like your other hand,” said Chef Ashley Davis, owner of Copper Pot Seddon in Melbourne. “I use a Japanese chef’s utility knife for almost everything.”
Davis puts lots of thought into making sure his restaurant’s wine list matches its menu, down to the wine glasses.
“We take FOH [front of house] and wine training as seriously as the food, I don’t think enough chefs understand the importance of this,” he said.
Chef Kathleen Schaffer, owner of Schaffer in Los Angeles, uses a spiralizer to make zucchini pomodoro with heirloom tomatoes and fresh Parmesan cheese.
“Everybody seems to be jumping on the spiralizer bandwagon,” she said.
Not all industrial kitchens come with a microplane, so Chef Nina Clemente, owner of The Smiles di Alba in Los Angeles and summer chef at The Standard Plaza in New York City, has taken to bringing her own when she caters in someone else’s space.
“I use tons of citrus zest in my recipes,” she said. “It’s very, very useful for infusing a little acidity into any dish.”
Clemente said this high-end blender is a worthwhile investment.
“It’s a nice little trick to just throw everything in there and blast it and get the most silky, beautiful sauce or puree or soup,” she said.
Chef Josh Capon, executive chef of Lure Fishbar, B&B Winepub and El Toro Blanco in New York City, is an expert griller who feels that simple seasonings are the way to go.
“I love a good pepper mill,” he said.
